Junior has been having such a good time learning to cook with me… And I’m getting better at letting him do it without micromanaging as much lol.. On this particular night, he picked the meal. I let him browse for ideas, & he chose Lemon Pepper Chicken, but like I always do, I had to change the recipe & make it mine.
You will need :
4 large chicken breasts, or 8 cutlets (Jr really enjoys cutting the breasts into cutlets themselves… like he’s unusually amused by it)
1 small yellow onion, sliced
5 cloves of garlic, minced
1 tbsp lemon juice
1 tbsp lemon pepper seasoning
1 tsp creole seasoning
1/2 tsp parsley flakes
6 tbsp butter
This picture may be the only proof that I let him do most of the work himself.. but I promise he did… Anyways, this part is easy. Place the slice onions in a layer on the bottom of your baking dish, then place your chicken breast cutlets on top of the onions, & top with minced garlic.
Sprinkle seasonings (except for parsley) over the chicken, then top each piece with about 1/2 a tablespoon of butter, & drizzle lemon juice over all.
Bake at 350 for 25-30 minutes, until golden brown & juices run clear, then top with parsley & enjoy! I thought this paired well with wild rice & brussels sprouts.

Lemon Pepper & Garlic Chicken
Ingredients:
8 chicken breast cutlets, or 4 lg chicken breasts halved width wise
1 small yellow onion, sliced
5 cloves garlic, minced
1 tbsp lemon juice
1 tbsp lemon pepper seasoning
1 tsp creole seasoning
1/2 tsp parsley flakes
6 tbsp butter
Steps:
- Preheat oven to 350 while slicing onion & mincing garlic. Arrange sliced onions in a layer on the bottom of a large baking dish, & place chicken cutlets in a single layer over the top.
- Top the chicken with garlic, lemon pepper seasoning, & creole seasoning. Place about ½ a tablespoon of butter on each piece, then drizzle lemon juice over the top.
- Bake at 350 for 25-30 min, until golden brown & juices run clear, then sprinkle parsley flakes over the top & enjoy!
